I was a green server at a popular gastropub and it was the first time I got to manage a section by myself. A couple I’d served before is seated, I grab them some waters and give em the spiel. One of the specials that night was steak tartare. It was made with homemade pickles, topped with quail egg, served with housemade crisps or sourdough.
